This is one of my favorite homemade desserts. It takes only a few ingredients, tastes like
ice cream, and even kids like them.
Chocolate Banana Chips are regularly made in this house. You can make as many or as little as you want,
just adjust the recipe, and it’s a great way to use up any extra bananas. Make sure that they are ripe, but not heavily
brown-spotted. Enjoy!
Chocolate Banana Chips
1 cup water
2 Tbsp lemon juice
3 bananas, peeled
1 cup chocolate chips
2 Tbsp coconut oil
Prepare a jelly roll pan (or other baking sheet) with a
sheet of wax or parchment paper. Next,
combine the water and lemon juice together in a bowl. Slice the bananas about 3/4-inch thick and
place them right away into the lemon water.
Let sit about a minute and then take out the banana slices and place
them on the parchment. Once all the
bananas are sliced, combine the chocolate chips and coconut oil in a microwave
safe dish and melt at 30 second intervals until just melted, stirring
in-between each interval. You should be
able to stir away the last little bit of unmelted chips. Spoon the melted chocolate over banana
slices, covering the top and sides.
Freeze for about 2 hours. Store
the banana chips in the freezer in an airtight container for up to 2 weeks.

ReplyDeleteI know! I usually put them in serving size containers so that I don't eat them all. And peanut butter chips?! I have not, but that sounds wonderful!
